Deep Fried Butter at the Texas State Fair

Deep Fried Butter
Food Buzz Deep fried butter is among eight creative treats available at the Texas State Fair. “100 percent pure butter is whipped 'til light and fluffy, then specially sweetened with a choice of several flavors.” It is then surrounded by a “special dough” and quick-fried.


Paula Deans Recipe for deep fried butter balls
Ingredients
2 sticks butter
2 ounces cream cheese
Salt and pepper
1 cup all-purpose flour
1 egg, beaten
1 cup seasoned bread crumbs
Peanut oil, for frying
Directions
Cream the butter, cream cheese, salt and pepper together with an electric mixer until smooth. Using a very small ice cream scoop, or melon baller, form 1-inch balls of butter mixture and arrange them on a parchment or waxed paper lined sheet pan. Freeze until solid. Coat the frozen balls in flour, egg, and then bread crumbs and freeze again until solid.
When ready to fry, preheat oil in a deep-fryer to 350 degrees F.
Fry balls for 10 to 15 seconds until just light golden. Drain on paper towels before serving.

The most glaring problem is my lack of exercise for last week. I just couldn't motivate myself to do it. First I blamed the depression prior to having my two ( perfectly healthy before the bad dentist drilled them away to nothing for a bridge) teeth pulled, then I blamed the pain and medications after having them pulled, and finally I blamed the need to work overtime to recoup some of our financial losses from the bad dentist. ( all of the missed work and extra daycare resulting from the extra appointments to normal dentist trying to correct the bad dentist work. You can guess how well that went) I have allot of excuses for not exercising and not eating better but now I need to clean up and put away the cake from my pity party (there wasn't really any cake as I couldn't have eaten it anyway due to my teeth or lack there of) and get back on track. It is like my mother always said, "Yes, something bad happened to you. Now you have a choice, can sit around and let this person keep hurting you by continuing to feel sorry for yourself (and pretending to eat imaginary cake) or you can get up, dust yourself off and continue living your life the best you can thereby showing this person that you are stronger than anything they can do to you." Sounds nice and it makes sense, the whole living well is the best revenge mindset, but it is hard to do. I tried to eat a salad the other day and it hurt for hours afterwards. I realize there is a reason they warn you about eating too many slider foods. Those calories add up fast and they don't fill you up like a nice fiber filled salad or meaty protein. Even the fat free re fried beans and scrambled eggs get old after awhile too. It's funny, I am one of those people that can eat a ready to drink shake everyday and not get tired of it but I will start to dread having to have another serving of cottage cheese after a few days. Maybe it is because I feel like I "have" to have it. There is some resentment there. I am choosing to have the ready to drink shake. I have to eat the cottage cheese because of my teeth. So why don't I just eat shakes and call it a day? I would love to and some days I actually can get away with doing that but unfortunately, I think I am far enough post op now that I do want some food. I was fine with the salads and the green veggies. It was working for me then I stopped being able to chew them. I want to eat my shoes by 10pm most nights if I only eat liquid calories all day. My goal weight is 140 and I am so close now, closer than I have been in almost 10 years! I don't want to let the bad dentist win by allowing what she did to me to keep me from reaching my goal. I am determined to start exercising this week and get back on track weather I can eat veggies or not. My two teeth are gone and I have to wait three months before I can start on the work needed for the two dental implants so now is the time before I am back to being unable to chew and in pain again! Wish me luck!

TMI story


Back when I was engaged to my husband, he took me up to his mothers house in the mountains. She made us dinner and I didn't want to make her feel bad but I really was questioning the cleanliness of her house and of her food prep area but I didn't want to offend her so I ate the food anyway. It was a LONG drive back to our house and I finally had to tell my future husband that he would have to stop somewhere soon as I didn't think I could make it home. He smiled nervously at me and admitted that he didn't think he would make it home either so we ended up at a 24 hour King Soopers (grocery store) and headed to the bathrooms. Unfortunately for us, this store, as with in many King Soopers, didn't have doors on the bathrooms it just had a wall with signs directing you to one side for women and the other for the men. We went in and it was awful. I was trying so hard to be quiet considering the no door situation but to make matters worse these bathrooms were also right by the employee time clock/break room. Next thing I knew I heard a mans voice from out in the hall bellowing, "Oh MY GAWD! OHHH ugh!" I tried not to laugh and instead loudly expelled more- well you know. It was greeted with even more loud protests from the person in the hall. I too was afraid now to leave the stall. Finally, I ventured out and was washing my hands when a large arm holding a can of air freshener poked around the entrance to the bathroom and sprayed. I almost died. My poor husband apparently got the whole person in the men's restroom spraying the air freshener while he cowered in the stall. I haven't eaten my mother in laws cooking since.

Out of dentists office..


How bad was it? Well, let's just say the new dentist called the old dentist after examining me and suddenly the old dentist is refunding my money. The new dentist then spent 3 hours working on me and is seeing me again tomorrow! This is the first fluid I've had in over 24 hours.
edited to add; we stopped to get Morts frozen custard (because I hadn't eaten or drank anything in over 24 hours and husband thought he was giving me a treat that I could actually eat) and I promptly vomited it and at least 1/2 of the chai up in the parking lot at husbands work where he stopped to tell his employer what had happened. Lovely huh. I got home dumped on the custard that I hadn't vomited and passed out.

that there is no after hours or emergency dentist in Anchorage! So they gave me a shot of pain medicine which made me vomit several times but thankfully I was too loopy to care

Happy Birthday to "Someone"?!?


Yesterday after a horrible day at work I managed to drag my still recovering self (I still can't hear and am really tired) over the sky bridge and into the gym. I walked 3.5 miles and burned 460 calories. Yeah! for me, except that I looked,um, well let's just say that the children at Lilith's school didn't run away screaming when I walked in to pick her up but I sure didn't get any of them coming up and trying to talk to me like they usually do.
I got this great idea to try this Japanese restaurant on the way home. Will was against it. I offered to allow him to go in first and if he didn't like what he saw, we could gladly turn around and go somewhere else. He refused so we went in. It was bad folks. It was so bad that they had a cake on the buffet line that had still had "Happy Birthday" written on it, the name part was already gone. So Will started singing, Happy Birthday to "Someone". Lilith joined in. I wanted to die but considering the food was so bad (I had mistakenly thought it might be healthier than Chinese food) and the fish tanks that made up the inside wall of the booths(which had the potential to be beautiful and even were still awe inspiring in a sad way)were so moss and alga filled that I wanted to rescue the fish in them, I knew we wouldn't be back. So, let my husband and daughter sing, the restaurant should have been embarrassed to put someones obviously unclaimed birthday cake out on their buffet line anyway. What made me sadder was the $40 we basically threw away. Lilith ate some noodles and some of the sad birthday cake. I ate some shrimp, tried their soup (which was basically water and cabbage), the salad bar was just a lettuce bin and some dressings (seriously that was all it had), and I was afraid to try the sushi after the one roll I attempted to eat was warm and mushy.
Will ate some tough boiled meat and some fish. I refuse to believe that the best salad bar in town is at the Hospital where I work but it is starting to look that way.
Maybe I should try to look on the positive side, "Hey I get to eat at the best salad bar in town and even get a discount 5 days a week!"...um not buying it.
Please, please..local readers, if there is a great salad bar out there, contact me! I want to try it. Ditto for decent Chinese!

What a sad excuse for a playplace!






After driving for most of the day checking out so Alaska scenery, we decided to stop at a McDonald's in one of the towns we were driving through that boasted a playplace. We thought Lilith would be able to run around and tire herself out some for the drive home. What a surprise we got when we entered the huge playplace area and discovered a giant cage! I am not kidding. The room was huge, more than enough space to enclose a good sized playland but instead it contained a giant cage. They didn't even supply balls. Can you believe it was byob! What a rip off.

Adventures in Moving and black mold!


We had black mold in our bedroom. Lovely, I know. We have been having respiratory issues for months and had missed work (and Lilith school). We tried everything from buying a super expensive vacuum cleaner to using disinfecting wipes to clean every door knob and surface in the apartment to no avail. One night our neighbor locked herself out of her apartment and while she was waiting for the locksmith to arrive, it came up in conversation that her roof had been leaking since last spring! Our bedroom borders her living room where the leak is. I got curious and started moving our bedroom furniture around. Sure enough, when I pulled our bed away from the wall, there was black mold growing up the wall behind it! Nice!
The huge apartment management (Weidner properties, they have properties in Colorado too), was unrepentant and basically had to be forced with threats of lawsuit before they even attempted to do anything about it. After calling several environmental and social services agencies to find out what our rights were, I found out that they have a really bad reputation. I was even told by the landlord tenant association that we would only get our deposit back if we took them to court. of course my coworkers, and even some of Will's coworkers all had horror stories about them too. Too bad we didn't ask about them before we rented from them. But then, hindsight is always 20/20!
They cut part of the wall out and left exposed insulation for a week, which made all of us VERY SICK! The carpet was moldy too but they choose to ignore it. My husband and I both asked the manager if they had another unit we could move into and were told that the only vacant units had "leaky roofs" and that we would have to pay a $150 transfer fee if we did move to another unit! I guess we were suppose to feel lucky that we just had mold.
The up side to it all is, we found a 3 bedroom ranch with a yard that is much bigger and isn't an apartment. We are occurring $100 more a month plus some added utility costs but I think it will be totally worth it. read more about weidner here!

Just say, "no!", to the drive thru!


As regular readers know, when I slip, I am honest about it. Well, yesterday not only did I slip, I fell and fell hard for my old friend MC Donald's! It all goes back to the argument, If we fail to plan do we plan to fail. Well, I certainly failed to plan. I was so busy with the roof situation and the resulting repair persons that came and went all day that by the time husband got home, I hadn't eaten much at all. We had some errands to run and by the time we were done, I was rocking one heck of a low blood sugar headache. MC Donald's was there, the golden arches gleaming seemingly on almost every block as we drove. Finally I asked husband to pull in one of the drive thrus. I justified a hot fudge Sunday for myself (even though I got a fruit and yogurt parfait for Lilith and could have easily got another one for myself!). Luckily I waited till I had fed Lilith dinner and put her to bed before eating it. I was in the middle of watching Lost when all of a sudden I had to literally run for the bathroom. It was bad. It was so bad in fact that it made my husband knock on the bathroom door and ask if I was okay! It was so loud and violent that it woke Lilith up in her room across the hall (even though her door was closed)! Please spare yourself and just say no to the drive thru! It isn't worth it. I knew there was a reason I was afraid of clowns as a child.

It was a good idea, in theory


Some of you may remember that I received this tub of candy from work for the holidays. I decided to make it the "pee pee candy" container which worked great for awhile. Lilith loved getting to pick her candy after she would go potty. Everyone was happy till the novelty wore off for her and she stopped going and even admitted that she didn't like the pee pee candy anymore. So refusing to believe that any child doesn't like chocolate treats, I went out and purchased mini Reese's Easter eggs. Well, it not only didn't motivate Lilith to go potty (neither did stickers, reward charts, or praise) but it reminded me how much I LOVE REESE'S EASTER EGGS! I need these out of the house yesterday! I have only had 8 in the 2 weeks that they have been in the house (remember these are the mini eggs not the full sized ones thank goodness) but they are calling to me! Help. We have now moved on to one toy a day (small stuffed animals, etc) for a good day on the potty. The pee pee candy must go!

Judging by the label, Pepperidge Farm Roasted White Meat Chicken Premium Pot Pie has 510 calories and 9 grams of saturated fat. But look again. Those numbers are for half a pie. Eat the entire pie, as most people probably do, and you're talking more than 1,000 calories and 18 grams of sat fat.

2. Angioplasta

Romano's Macaroni Grill Spaghetti with meat sauce is just your average 1,100-calorie platter of white flour, fatty meat, and salt-laden sauce that delivers 35 grams of saturated fat. But Romano's Macaroni Grill Spaghetti and Meatbealls with Meat Sauce is in a class of its own. It's not often you find a 2,430-calorie dish loaded with close to 3-days' worth of saturated fat (57 grams) and more than 2 teaspoons of salt (5,290 mg of sodium). It's got more calories and sat fat than two Macaroni Grill Tuscan Rib-Eye steak dinners!

3. Salt's On!

Progresso Traditional, Vegetable Classics, and Rich & Hearty soups are brimming with salt: Half a can averages more than half of a person's daily quota of salt. Instead try Progresso's Health Favorites reduced-sodium soups. All the flavor, but up to 50 percent less salt.

4. Everlasting Dove

Dove squeezes some 300 calories and an average of 11 grams of saturated fat (half a day's worth) into a half a cup of its Dove Ice Cream. That puts it in the same ballpark as Ben & Jerry's and Häagen-Dazs. With names like "Unconditional Chocolate," Dove is trying to link chocolate with romance. A scoop of its ice cream will fill your heart all right … but not with love.

5. Factory Reject

The Cheesecake Factory Chris' Outrageous Chocolate Cake has "layers of moist chocolate cake, chewy brownie, toasted coconut pecan filling, and creamy chocolate chip coconut cheesecake." Each five-inch-high slice weighs three-quarters o fa pound and has 1,380 calories and 32 teaspoons of sugar. By the time you hit the exit, your arteries have 33 grams of saturated fat and 5 grams of trans fat circulating in them that they didn't have when you walked in. It's a though you had ordered two McDonald's Quarter Pounders plus a large fries for dessert.


6. Smooth Operatos

“Say hello to a better beach body," says the Smoothie King web site. Many people assume that all smoothies are good for the body, whether it's on the beach or in the office. But Grape Expectations II, one of Smoothie King's "Snack Rights," contains 550 calories in a 20-ounce size. That's bad enough. But what about those who order the 40-ouncer? There's nothing right about a 1,100 calorie snack!


7. Top Secret

Popcorn alone is a good-for-you whole-grain snack...but not when Pop Secret gets hold of it. Pop Secret Movie Theater Butter Popcorn Snack Size Bags has 11 grams of bad fat, 7 of which are trans, in just one snack-size bag (6 cups popped). Instead, try Orville Redenbacher's Smart Pop or Smart Balance Smart 'N Healthy, both of which are made with no partially hydrogenated oils.


8. Starbucks on Steroids

The Starbucks Venti (20 oz.) Caffè Mocha with whole milk and whipped cream is more than a mere cup of coffee. Think of it as a Quarter Pounder with Cheese in a cup. Few people have room in their diets for 450 calories and 13 grams of bad fat that this hefty beverage supplies. But you can lose all the bad fat and all but 170 calories if you order a tall (12 oz.) with nonfat milk and no whipped cream.

9. Tortilla Terror

Interested in a Chipotle Chicken Burrito (tortilla, rice, pinto beans, cheese, chicken, sour cream, and salsa)? Think of its 1,040 calories and 16½ grams of saturated fat as three Subway Steak and Cheese 6-inch Subs. Plus, the burrito is loaded with 2,500 mg of sodium! Getting the burrito with no cheese or sour cream cuts the saturated fat to 3½ grams, but you still end up with 810 calories and 2,300 mg of sodium. Yikes!

10. Stone Cold

Into the chocolate-dipped waffle bowl of a Cold Stone Creamery Gotta Have It Founder's Favorite goes, not just a 12-ounce, softball-sized mound of ice cream, but pecans, brownie pieces, fudge, and caramel. The tab: a startling 1,600 calories and 42 grams of saturated fat. That's roughly what you'd get if you polished off five single-scoop ice cream cones.

Well then, this is why you're fat .com is the site for you. You can even send in your own heart attack on a plate photos. Too bad this site didn't exist when I worked for Denver General Hospital. They had a Mc Donalds in their lobby back in the day. You could get your cardiac stint done and get Quarter Pounder on your way out so you could start working on needing your next stint. Maybe the hospital thought it was a great way to ensure repeat business?
