Tonight I am making a sort of healthy cheese cake;
6 reduced fat graham crackers crushed
3 tbsp margarine, melted
1 cup plus 3 tbsp. Splenda divided
5 packages(8oz each) Neufchatel cheese
3 tbps flour
1 tbsp vanilla
1 cup reduced fat sour cream
4 eggs
1 can reduced sugar or sugar free cherry pie filling (21oz)
Heat the oven to 325 degrees. Line a 13x9 inch pan with foil. Mix crumbs, 3 tbsp Splenda and margarine; press onto bottom of pan. Bake for 10 minutes.
Beat Neufchatel cheese, remaining flour and vanilla with mixer until blended. Add sour cream, mix well. Add eggs 1 at a time, mixing on low speed after each just until blended. Pour over crust.
Bake 40 minutes or until center is almost set. Cool completely. Refrigerate 4 hours. Top with pie filling. Use foil to lift cheesecake from pan before cutting to serve. Makes 16 servings
